Blueberry Sauce

 1 cup blueberries
 1/4 cup sugar
 Two 1-inch lemon zest strips

In a non-reactive saucepan, mash 1 cup blueberries with 1/4 cup sugar. Add 1 cup water and two 1-inch lemon zest strips, cover and simmer for 15 minutes. Strain, return to the pan and simmer until slightly thickened. Serve over pancakes or ice cream.
